I came home and realized that I needed to go food shopping but have been running around like a mad woman these past couple of weeks and finding the time to go to the grocer's is like a luxury for me. Luckily, my cupboards already had some spices that I can work with and so I literally threw some ingredients together and came up with this creamy vegan alfredo pasta.
Before I go into the recipe and how yummy this was to my tummy, I should let you know that I wasn't always this domesticated. As a matter of fact, I used to hate to cook. My kitchen was usually kept pristine and my oven served as extra storage. Fast forward years later, after I got very sick from antibiotics (that story will be for another time), I made the conscious decision to eat healthy and to do that meant cooking from scratch. It might seem daunting at first, but with sites like Pinterest and boards like this, the possibilities are endless. I normally consult with Pinterest before beginning any recipe. I saw a few vegan alfredo recipes, but I didn't have all the ingredients they required, so I had to improvise.
I am going to give you recipe, but I want to warn you that I didn't measure and so this recipe is going to be by taste and sight, which is how all the greats cook. I'm not great yet, but I like to think I'm pretty good.
Almond milk - plain, unsweetened
While cooking the pasta, chop up the sun-dried tomatoes into small pieces and squeeze the lemon (no seeds-duh). After cooking the pasta to the desired consistency, remove from heat & drain. Add back to the pot. Add a few table-spoons of almond milk and a couple of table-spoons of nutritional yeast. Turn heat on low to simmer. Add garlic powder, salt and sun-dried tomatoes. Stir slowly. Taste as you go along to determine how much of each ingredient you need to add. I like my alfredo to be garlicky, and no one wants to kiss me afterwards, but that is okay because me and my belly are happy.
This is a great alternative to your regular alfredo, especially if you're on a low-fat diet. The only real fat you're getting is from the almond milk and that's the good kind of fat. You won't ever want to buy store bought alfredo ever again. This was so easy and tasty. Plus, low-fat processed food means lots of extra chemicals to mask the taste and we don't like chemicals.
