Are you making full use of all the food in your kitchen? You know, all those vegetable scraps that you toss into your garbage can? The onion peels, the stems from broccoli, the garlic that's starting to regrow. Don't throw them out, instead, store them in your freezer to make vegetable broth!
I was buying and storing so much vegetable broth because I like to use it to add flavor in lots of my recipes. To give rice and quinoa some extra flavor, to thin out soup. I was using tons of it, and spending money and throwing out perfectly good vegetables. How counter productive is that? Last year in March, I was introduced to Kombucha. I was in Miami at a farmer's market and being drawn to cool bottles, there was a table that was selling this stuff. I had no idea what it was, but I liked the bottle (I'm such a girl). I tried a sample and decided it was worth the $6.99 to drink this kombucha stuff and have a cool bottle to save.
After I got back from my trip, I decided to research more about kombucha. I'm one of those people who will do research for fun. I learned that it was an ancient probiotic drink. As someone who is gluten sensitive, I blame antibiotics for my affliction, helping all of my good gut bacteria seemed like a good idea. Plus, I like the way kombucha tastes. I was buying kombucha at the store for a while, but that got really expensive at about $3.69 a bottle. They say you want to drink a bottle per day. My sister suggested that we start making our own kombucha. I was afraid to do it at first, but soon, I found out that it's as easy as making tea.. with some extra stuff.
I came home and realized that I needed to go food shopping but have been running around like a mad woman these past couple of weeks and finding the time to go to the grocer's is like a luxury for me. Luckily, my cupboards already had some spices that I can work with and so I literally threw some ingredients together and came up with this creamy vegan alfredo pasta.
